If there’s one thing every coffee lover agrees on, it’s that freshness is everything. The aroma, flavor, and smoothness of your daily cup depend on how well you store your coffee once it leaves the roaster. At Proper Brew, we small-batch roast every blend to preserve those delicate oils and flavors — but once your bag arrives, your storage habits take over.
Here’s how to keep your beans tasting just as good as the day they were roasted.
1. Air Is the Enemy
Once coffee is roasted, oxygen becomes its biggest threat. Exposure to air causes the flavorful compounds and oils in your beans to break down quickly. Always store your coffee in an airtight container.

Use containers with a one-way valve, which lets carbon dioxide escape without letting oxygen in.

Avoid glass jars unless they’re tinted — light exposure can dull the flavor too.
A simple, well-sealed tin or ceramic container works wonders. Keep it on your counter, not in the fridge.
2. Skip the Refrigerator — Seriously
It might seem logical to refrigerate coffee, but cool air equals moisture, and moisture is the flavor killer. Beans can also absorb odors from nearby foods (and no one wants “onion-latte”).
Instead, store your beans in a cool, dark, and dry place — like a pantry or cupboard away from heat and sunlight.
3. Whole Bean Beats Ground
Grinding exposes the inner flavor compounds to air, making them fade faster. That’s why we recommend buying whole-bean coffee and grinding it right before brewing.
If convenience is key, choose our Proper Brew ground options, which are sealed immediately after grinding to lock in freshness. But whenever possible, grinding fresh will always give you the richest aroma and taste.
4. Buy Smaller, More Often
We roast in small batches for a reason — coffee tastes best within a few weeks of roasting. Rather than stocking up on giant bags, buy smaller quantities more frequently.
Our 12 oz (340 g) bags are designed for about two weeks of daily brewing — just the right amount to keep things fresh and flavorful.
5. Check the Roast Date, Not the Expiry
Coffee doesn’t “expire” in a dangerous way, but its flavor definitely fades. Always check for a roast date on your bag (you’ll find it on every Proper Brew label).
For optimal freshness:

Medium to dark roasts can stay flavorful for about 4–5 weeks when stored properly.
